I believe strongly that the way to become skilled in Illustrator most rapidly is to learn specific techniques as they are needed. We learn best when we apply technique to our own projects. In this way, you customize your learning to your own interests and requirements as an artist. To do this, however, it is helpful to know where to look for answers!
For instance: Once you've begun to use Type on a Path and Type in an Area, you may find yourself wanting to tweak shape, direction, etc. The best resource for finding your answer quickly is the Adobe Illustrator Reference Manual at Adobe.com (see the link "Adobe CS5 User Manuals" under "Important Course Docs" in the right column of this website.)
Here are some sections you may wish to access as you go:

AND! you can always search the Adobe help resources from inside the Ai program under "Help"--this includes the reference manual and tutorial videos at AdobeTV that are fine-tuned to answer your specific question.
Most importantly, you can't be afraid to explore and just test things out and you have to, alas!, be patient. Rome wasn't built in a day.
